CARBOXY METHYL TAMARIND KERNEL POWDER

Also known as MODIFIED TAMARIND KERNEL POWDER 

Tamarind kernel powder is a rich source of xyloglucan gum and carboxymethylation of tamarind kernel powder is carried out mainly with a view to utilize the tamarind gum for broader applications. When Carboxymethylation is done to tamarind kernel powder it increases its solubility in cold water and the stability of its paste to microorganisms and the reaction conditions are optimized with respect to concentration of sodium hydroxide, monochloroacetic acid, solvent ratio, reaction time, and reaction temperature.

Handling of Modified Tamarind gum powder

Carboxy methyl tamarind kernel powder should be packed in moisture proof containers. And excessive heat and humidity should be provided; the gum powder may deteriorate through enzymic action during long storage. To avoid this, modified tamarind kernel powder should be mixed with 0.5% by weight of sodium bisulfite and fumigate with sulphur dioxide at frequent times.
